Pork Satay
Thai Style Grilled Chicken
Pork Satay
Ingredients for pork marinate pork 1 kg
1 kg of pork cut into thin slices
1/2 tablespoon of Jeera
2 tablespoons of ground coriander
1 stalk of lemon grass finely chopped
1 teaspoon of turmeric
1 teaspoon of finely chopped gangla
1/2 teaspoon of white pepper
3 tablespoons of condense milk
1 tablespoon of palm sugar
1/2 cup of coconut cream
4 tablespoons of butter
1 tablespoon of salt
1 tablespoon of curry powder
Ingredients for dipping sauce
1 teaspoon of chilli powder
5 tablespoons of ground coriander
1 tablespoon of Jeera
5 heads of shallot
3 cloves of garlic
1/2 cup of smooth peanut butter
1 tablespoon of salt
3-4 cups of coconut milk
Pork marinate Method
1) Blend glangla, lemon grass, turmeric, pepper, Jeera, coriander and salt together.
2) Bring pork to marinate with the above ingredients and put coconut cream and condense milk into a mixture. Leave it marinate at least 1 hour, for best should leave it marinate over night.
3) Stick pork into bamboo stick and grill it over medium heat until it well done.
4) Serve pork with dipping sauce and cucumber slice in vinegar.
Dipping sauce method
1) Mix chilli powder with salt in a blender, followed by ground coriander, Jeera, shallot and peanut butter. Blend them together until smooth.
2) Bring coconut milk to boil and then put mixture in step 1 into the coconut milk, Simmer until it becomes thicker.
3) Seasoning with palm sugar, salt and fish sauce.
Variation
This pork Satay is quite complicated to make, nowadays there are many kind of instant Satay kit that available in general oriental supermarket.
Thai Style Grilled Chicken
Ingredients
Whole chicken (1.5 Kgs)
2 stalks of lemon grass finely chopped
4-5 cloves of garlic
2 teaspoons of ground white pepper
1 tablespoon of salt
2 tablespoon of soy sauce
2 tablespoon of fish sauce
Method
1) Cut chicken into tow halves.
2) Blend lemon grass, garlic, white pepper and salt together in mortar or food processor.
3) Bring chicken to mix with the lemon grass mixture, from 2 and put soy sauce and fish sauce. Leave chicken to marinate in the mixture for at least two hours
4) Grill chicken on low heat until it well done and golden brown.
